NASSAU, BAHAMAS – Summer is still here, so that means you still have time to find your perfect summer cocktail or mocktail with or without alcohol, your preference.

Oranges, grapefruits, mangos, pineapple, lemons even soursop are all ingredients associated with the perfect summer cocktail, as they amplify the very taste of the season, but how do you know which ingredients blend well together?

Anthony Major-Smith – Vice President of Operations, Old Pal Hospitality

“I think you can take it all from the classic daiquiri, which is rum simple syrup or sugar and lime,” he said.

Smith’s advice says it all.

Old Pal is the parent company of the Dilly Club and Bon Vivants Bar and Cafe.

They are known for their unique cocktails and mocktails, and fans of the establishment say they have mastered the science behind mixing seasonal drinks, highlighting their signature summer drink “Sumtin Sweet” fused with their in-house sour sop syrup.

Major says although the ingredients of a summer beverage sounds elaborate, the recipe is simple.

However it gets tricky when you graduate to incorporating different fruits.

He reminds me that mixology is a science and you must balance a chemistry of flavors.

“What about some persons that don’t want to drink alcohol necessarily but they want a nice mocktail…how are mocktails created to give you that same taste,” she asked.

“You have a lot of companies making non alcoholic spirits, so you get a lot of herbaceous qualities and stuff like that in the spirit themselves, [and] today we’ll actually be using one, it’s almost like Campari but without the alcohol,” Smith said.

Smith also says your cocktail or mocktail quest will have slip-ups.

However he insists that’s the beauty of uncovering your perfect summer beverage.

“I think you should experiment with flavors, once you have something and have it in abundance try a few things, do your research and see what other classic cocktails you can make a cocktail from and then go from there. What if it taste bad? Try again,” he said.
