GRAND BAHAMA, BAHAMAS – The Stoned Crab Restaurant reopened in 2019, just before the world changed. 

However, Olivia Pagés has kept her doors open, adapting as the island shifts around her.

“We opened in 2019, worst time ever to open, but we made our way through, we are very resilient in Grand Bahama…,” she said.

Now tourism is back and so is the pressure.

“We see the need to grow staff and inventory. We do have way more people on the island right now, we have more visitors, we have a lot of people that work here now due to the projects that are ongoing especially since last year,” she said.

It’s a balancing act between experience, culture, and expectations, especially post-pandemic.

“…We have a lot of unexperienced young people, they still need to learn, we do our very best to train them, but really trained staff is really needed,” she said.

As developments like Celebration Key attract more workers and visitors, Olivia is hopeful and intentional.

She says that she’s creating more than a menu, she’s building a mirror of modern Grand Bahama.

“My main focus [is] to try to show that this [is] very modern, this is very traditional, you see the thatch roof compared to the steel structure to bring this together and show what The Bahamas has to offer,” she said.

A restaurant she says is rooted in resilience and adjusting to meet the moment.
