BARBADOS – Have you ever tried a bajan quesadilla?
Well, that was just one of the culinary surprises I encountered during my stay in Barbados, thanks to Lickrish Food Tours’ Round de Towns excursion.
On Tuesday morning, twelve regional journalists and media personalities, including me, boarded the tour bus for a journey that promised to explore the island’s culture, one bite at a time.
However, before we could get a taste of Barbados, there was a little Bajan lingo to learn.

“For those who don’t know what it means, it means greedy, gluttonous, you love to eat, and today we gone be lickerish”
Our culinary journey took us to three eateries across two of Barbados’ parishes, with each stop offering something different.
First up was Park Cafe in Christ Church, where we were greeted by a quite unexpected take on a familiar favorite.
Nestled amid lush greenery, the restaurant served up its version of a Bajan quesadilla.
Made with chickpeas and packed with flavour, the quesadilla also featured carrots, a unique addition that stood out to me personally.
However, the flavors quickly won me over, and before long, there was nothing left on my plate.
From our first savory stop, we were back on the road and headed to our next destination, PRC Bakery in Saint Peter.
This time, the table was set for something sweet.
We were treated to an assortment of local and bakery favorites, including leadpipe, danishes and biscuit bread.
I tried the coconut turnover, and one bite was all it took to take me down memory lane.
The combination of coconut and cinnamon delivered that familiar, comforting taste that makes you want to go back for more.
After indulging in a few sweet treats, it was time for lunch at Angels Bar in Christ Church.
The fish cakes were a personal favorite, reminding me of the conch fritters we enjoy back home in The Bahamas.
Then, just when we thought the tour was over, there was one final stop, ice cream at R-Tic Melt Icecream Parlor, just across the street.
By then, some delegates were wishing they had skipped breakfast!
