NASSAU, BAHAMAS – The Bahamas Culinary & Arts Festival’s Tacos and Tequila Mexican Brunch was not the dinning experience I anticipated.

Hosted at Costa at Rosewood Baha Mar, we were guided through a culinary expedition that showcased the vibrant flavors of Mexico.

Claudette Zepeda – Award Winning Chef

“When people see our food many times they’ll say well that’s not Mexican and people like us we like to question that status quo, that normal, well what is Mexican?”

Zepeda shared that Mexican cuisine has evolved, and Alfredo Villanueva added that it is a fusion of cultures.

Alfredo Villanueva – Award Winning Chef

“Today we share one point of the culture is the immigration. The immigration is natural, the immigration is moving the people.. and the eating is.”

After providing their detailed explanations, the chefs presented a brief cooking demonstration, and then it was time to eat.

The first dish Kampachi Pomergrante Leche de Tigre Pecan Aolio.

Next was the Crispy Cured Shiitake Mushroom Taquito, which was followed by Pork Belly Al Pastor Bao, Chinesca Fried Rice with Wagyu, and then a Bunuelos de Viento with ice cream for dessert.

Each menu item was paired with a cocktail made with Don Julio tequila.

Each menu item was served family style, curating an atmosphere which encouraged conversation amongst guests.

For me, the experience ultimately provided a greater appreciation for Mexican food culture.
